KUMQUATS

Kumquats are in the citrus family, though not in the Citrus genus which includes lemons, limes, oranges and grapefruit. Kumquats look like miniature oranges with the size similar to a small cherry tomato.

Kumquats are eaten like grapes -- skin, seeds and all. The flavor is a tart-sweet. The inner pulp is on the tart side; the skin is mildly sweet and leaves a pleasant citrus taste in the mouth. Store kumquats in the refrigerator for up to two weeks. Due to their thin skin, they won't store as long as oranges. Make sure to wash the fruit prior to eating. For use in jams and jellies, it may be necessary to remove the kumquat's seeds.
